Adjust Servings:
4 cloves Garlic Minced
1 Shallot Finely chopped
2 cans Canned Tomatoes Cubes, puree or whole depending on preference
3 tbsp Brown Sugar To taste
2 tsp Italian Herb Mix To taste
1 sprig Thyme Fresh, leaves only. Optional
1 sprig Oregano Fresh, leaves only. Optional
3 tbsp White cooking wine
1 tsp Salt To taste
1 tsp Black Pepper To taste
1/3 cup Water
2 tbsp Olive Oil
1 tsp mushroom powder
1/2 tsp Paprika Sweet or spicy

Pasta or Pizza Sauce Recipe

Fresh and tasty homemade tomato based pizza or pasta sauce.

This is a pizza sauce recipe that I also use for pasta and lasagne. In fact, it can be used for meats and fish and even vegetables. I have never used bottled tomato based pasta sauce without adjusting the flavours. Since I was young, I was taught to always adjust store bought sauce to enhance and make it better when I first started learning how to make spaghetti.

So the habit has stuck on since and I am glad because when I was in rural China, I could not get my hands on these sauces easily. So I cooked up my own sauces using raw tomatoes. Honestly, those are the best. So then I started making sauces from tomatoes and not having to pay for bottled sauce that I need to adjust anyway. Healthier and cheaper too!

In any case, this is a recipe that you can adjust accordingly to your taste. You can use fresh tomatoes or canned tomatoes. Puree, whole or cubed, depending on the texture of the paste you want. I don’t mind mine a little chunky, so I don’t bother with blending but just cook till soft and I mash it with a spoon or fork. As for the wine, I use the Chinese hua diao wine since I was a kid because I always have that in my kitchen but I use mirin and Japanese cooking wine or sometimes if we have leftover sweet white wine, I will use that. This is mainly to give the sauce some sweetness and aroma. After it is cooked you can’t quite tell which wine was used unless you added a lot.

For herbs, I used Italian herb mix mostly just because I have a big jar of it and it is already the right blend so it is really easy. But if you want to give it a fresher taste, you can always add some chopped fresh herbs in on top of the dried ones. The difference between fresh and dried herbs is that dried herb has a deeper and stronger flavour than fresh. But fresh herbs lends a fresh note to the sauce. I will usually add some fresh thyme and oregano over and above the dried herbs if I have them available but I won’t go out of the way to get them.

Taste your sauce and add whatever is missing. Let your inner force lead the way. Here, I will just provide a general guide.

I didn’t know the importance of this sauce until I went to a friend’s place to try his pizza as he is making pizza for the first time. One bite and something was missing and we finally figured it was the flavours of the sauce.

Soften Garlic and Onions

Over low heat, add olive oil, garlic and onions. Careful not to brown them.

Add Tomatoes and dried herbs

Add tomatoes and dried herbs. Cook till slightly soft.

Add wine and seasoning

Add wine and all seasoning. Cook for 10 minutes then taste and adjust accordingly. If you are concerned about sauce being too sweet, add 2 tbsp first.

Blend (Optional)

If you want a smooth sauce, go ahead and blend it either with an immersion blender or food processor.
