    My clear fridge almost instant meal. All I had to My clear fridge almost instant meal. All I had to cook was a little rice, pan fry the chicken and the mushrooms. Everything else was ready in fridge. Roasted sweet potatoes, roasted curry cauliflower, avocado, cherry tomatoes and spinach goma salad and quinoa. 

Protein bowl ready in 15 min!
    Lunch to beat the heat. Quinoa warm salad bowl. Co Lunch to beat the heat. Quinoa warm salad bowl. Cooked peppers, carrots, onions, cabbage, mushrooms and chickpeas with dukkah spices and then mixed w cucumbers, olives,  cranberries, canned tuna (optional) and quinoa. Served with a cold Spanish tomato soup. 

So appetizing on a hot day that we had second servings!

Hubby kept asking me if she can finish her food… she has ong blood. Of cos she can. 😂

    Day 4 breakfast. Salad bowl with pumpkin, chickpea Day 4 breakfast. Salad bowl with pumpkin, chickpeas, granola, rocket, blueberries, avocado, Muruku, and cherry tomatoes drizzled with 8yo balsamic vinegar and olive oil. 

Morning beverage is black bean, black sesame and walnut milk. 

Frankly it was filling but I can have a bcm after… nearly did so while waiting for niece to finish her ballet. Hubby had to stop me. It was just there…..

Started with a no cook breakfast as it is both hassle free and great for a hot day. 

Spanish tomato soup or tomato gazpacho with giant tomatoes, bread crumbs, olive oil and garlic blended then topped with pine nuts. Refreshing start! Eaten w @time2risebakery sourdough bread, one with almond cashew butter and 1 bread end for the soup. 

Added 5 pieces of melon seed bars by the side for a protein boost. 

Surprisingly i managed to last till lunch tho I was hungry by 11am. 

Lunch was fried bee Tai mak at in laws with broccoli by side which was in such a small portion that I was not full throughout. But was so busy that I managed to survive till late dinner at 8pm at Jin wee. Which also explains why I was too hungry to take any photos…. 🤣

    Day 2 lunch. Came home after morning of meetings t Day 2 lunch. Came home after morning of meetings to prep lunch cos cannot think of what to buy back… simple meal. Instant breaded prawns. Tried to pan fry but gave up and threw into toaster. 😂

Day 2 breakfast. Had a substantial one cos I know lunch will be later. 

Soba noodles with hummus, edamame, natto, cucumber, marinated beansprouts and seaweed. For beverage, it is soy milk with perilla seeds and flax seeds sweetened with medjool dates. 

I couldn’t finish all!!! Left a bit of natto and edamame and had to rush off for work. 

Answer: 5 types of beans - edamame, mung bean sprouts, chickpeas, black beans, soy beans 

4 types of seeds: flax seeds, perilla seeds, black sesame seeds, white sesame seeds (tahini)

    Dinner of day 1. Realised I cooked too little!!!! Dinner of day 1. Realised I cooked too little!!!! 1.5 hours after dinner, I came back from a meeting hungry so made a glass of smoothie with mixed berries, dates, protein powder, oats and coconut water. 

Dinner was bean sprouts with chicken breast (not enough bean sprouts!!!) and tofu with long beans and shitake mushrooms spiced with togarashi. Goes so well w rice. 

Had Japanese strawberries and matcha green tea as dessert. 

Not enough vegetables tonight!!!
